Parsley

Here is something you may not know about Parsley!

It has three times the Vitamin C of Orange and twice as much Iron as spinach. 2 table spoons of it will provide 150% of the recommended daily intake of Vitamin K. It is also super rich in Folic acid.

So I have created my own special pesto sauce that you can use either with pasta or over salad to give you a super healthy option and an alternative to the traditional pesto.

2 bunch of Parsley
1 bunch of coriander
1 bunch of mint
1 clove of garlic
a hand full of pine nuts
half a hand full of cashew nuts
juice of 1 lemon
Juice of half a lime
Half a tea cup of olive oil and half a tea cup of corn or other oil

Put everything in to a blender add salt and pepper for seasoning and blend.

you can make large quantities and keep in the fridge or divide them in to smaller portions and freeze them.

Winter Blues

In winter we all get the blues and rightly so. Unless we are lucky enough to live in a warm and sunny climate we rarely see the sun through out the winter. It is totally normal not to want to wake up in the morning when what we wake up to is a dark damp and cold start to the day!

Depression and feeling blue are common side effects of winter and the lack of Sunshine.

We get the majority of our Vitamin D from exposure to the sun. so the reduction in our exposure during the winter  means that our Pituitory glands do not function as normal and therefore we feel more hungry than usual and so we put on winter fat.

The way to combat this is to increase the intake of Oily fish and to take Vitmin D suppliments. It also helps to walk out doors a bit more than one would want to because although it may be cloudy or rainy and grey the sun's rays still do come through.

Failing all the above why not try and schedule a sun break in the winter every year to give your self the health boost needed in the cold winter months.
