                         PUMPKIN'S and their BENEFITS

Pumpkin's are more popular for their decorational uses than their health benefits, So I would like to tell you a little bit about them so that this Halloween you can tell your kids that they dont just chase away the Ghouls and Ghosts but also the bad stuff in the body!

Pumpkins are rich in Vitamins A,C & E and necessary for maintaining the integrity of the skin and the mucus membrane. It is essential in fighting Cholesterol and because it is rich in Carotenoids, both carotene's Alpha and Beta it is beneficial in the fight against degenerative eye diseases and provide fiber.

Pumpkin Seeds

Keep the seed and toast them because you can use them with your food.
Toss them with your salads or just sprinkle them on your frozen yogurt or just have them as snacks.

They are rich in Magnesium and they stabilise the blood sugar levels. Rich in Tryptophan which converts in to Serotonin in the body. Serotonin is excellent in helping with sleep. So this is perfect for your children and all adults that have trouble sleeping at night.
Last but not least they are rich in Omega 3 and they help fight cancer and keep you healthy.

Try Pumpkin and Orange soup with toasted pumpkin seeds on top

Select quantities according to your numbers.

Roast Pumpkin flesh and add to some fried garlic and onions. Add the juice of 4 oranges (4 oranges for every medium sized pumpkin) add equal amount of water as the juice and cook for no longer than 15 minutes on medium heat in order to preserve the Vitamins and Minerals.
Add seasoning ( I find that salt, pepper and coriander works well)
Blend and serve with toasted pumpkin seeds and and toasted bread.

Afew other things you could make are:

Pumpkin quiche
Pumpkin and zucchini salad
Pumpkin pie
Roasted Pumpkin and potatoes to go with your Sunday roast

Have a Happy and Healthy Halloween.

I would love to hear your recipes for Pumpkin

An extract from my book

Staying Young & Healthy
http://www.amazon.co.uk/Staying-Young-Healthy-ebook/dp/B0074JK76C/ref=sr_1_1?ie=UTF8&qid=1347341852&sr=8-1

Let’s move on to another one of my all time favourite snacks, carrots. They are sweet, crunchy and full of the stuff that keeps you looking young!!
Yes Young!!
It is a powerful anti oxidant and its anti ageing, which helps to keep the skin protected against sun damage and wrinkles.
In fact carrots reverse the effect of sun damage on the skin. Carrot juice has been found to have considerably less benefits than actually eating carrots themselves. In addition carrots help you lose weight because your body uses more calories digesting it than it provides.
They contain a large amount of beta-carotene, which gives it its orange colour.
